Muffins are a great breakfast for relaxed weekend mornings, and these Banana Muffins with Streusel and Icing are a great way to start the day. This recipe uses up any overripe bananas you may have lying around, which is great for preventing food waste.

Bananas that are overripe, with their peels starting to blacken, release their sugar to produce a sweeter and stronger flavor in baked goods. The streusel is made of an easy combination of common ingredients and adds a delicious layer to the top of your muffins. Drizzle just a bit of icing on top for the perfect breakfast muffins.

Muffins
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 egg
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- 3 bananas (mashed)
- 1/3 cup applesauce
Streusel
1/3 cup light brown sugar
1/8 cup all-purpose flour
1/8 tsp cinnamon
1 1/2 tbsp butter (softened)
Vanilla Icing
3/4 cups powdered sugar
1 tsp vanilla extract
1 tsp milk

Instructions
1. Preheat the oven to 375′ F and line or grease a muffin pan
2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon

3. In another mixing bowl, combine the egg, brown sugar, vanilla extract, mashed bananas, and greek yogurt, applesauce, or sour cream

4. Pour the wet ingredients into the dry ingredients and gently stir until fully combined, without mixing more than necessary

5. Use a cookie scoop or a spoon to fill each muffin cup about 2/3 full

6. In a small mixing bowl, prepare the streusel by combining the brown sugar, flour, and cinnamon
7. Using a pastry blender to cut in the butter

8. Sprinkle the streusel over the muffins then bake for 20-25 minutes, until a toothpick comes out clean

9. Meanwhile, whisk together the powdered sugar, milk, and vanilla extract to make the icing

10. Once the muffins have cooked and cooled slightly, drizzle them with the vanilla icing

These sound so good! I love banana muffins! I make them a couple times a month but never thought of adding a streusel topping, so clever! When my bananas are getting ripe I like to toss them in the freezer peel and all then when I bake my muffins I let them frost cut the end and they come out almost perfect mashed just like that!
