Are you looking for a simple dinner recipe that can feed the entire family and still have some leftover? This easy Chicken Alfredo Lasagna is exactly what you need. Not only is every bite packed full of cheese, chicken, and broccoli but you’re also going to love how simple this recipe is to make. And with a crazy year, I’m all about an easy meal.

When you decide to make up this simple dish, you’re going to really be impressed that it’s not going to take you any longer than 1 hour of time to make. And since you’re going to have some time leftover, you might as well whip up something simple for dessert as well, right?

I also really like that this dish gives me a chance to get a few extra veggies into the kid’s bellies, too. I’m not ashamed to hide the veggies in cheese and other tasty ingredients! Once I see them filling and fueling their bodies, it makes me a very happy momma, for sure!

If you’re lucky enough to have some leftover, just pop it into a sealable container with a lid and store it in the fridge. You’ll be able to reheat it easily when it’s time to sit down and eat, which is something that I like to call Round 2!

Chicken Alfredo Lasagna

Makes 6 servings
Prep time: 20 minutes
Cook time: 50 minutes

Ingredients:

  • ½ tablespoon olive oil
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 15-ounce container ricotta cheese
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese
  • 3 cups cooked and shredded chicken
  • 1 teaspoon Italian seasoning
  • 1 package frozen broccoli florets, prepared and finely chopped
  • 3 cups shredded mozzarella cheese
  • 9 lasagna noodles, cooked

Instructions:

1.Preheat the oven to 350 degrees and grease a 9×13 baking dish with nonstick cooking spray.

2. Heat the olive oil in a skillet over medium heat. Add the onions and garlic and cook until translucent, around five minutes.

3. Add the onions and garlic to a large bowl with the ricotta cheese, heavy cream, parmesan cheese, chicken, and Italian seasoning. Stir to combine.

4. Spread a layer of cheese mixture over the bottom of the casserole dish and top it with a layer of lasagna noodles. Spread another layer of cheese mixture, topped by broccoli and a layer of shredded cheese.

5. Continue stacking the ingredients in the above order until the dish is full, ending with a layer of shredded cheese.

6. Cover the dish with foil and bake in the preheated oven for 30 minutes, then remove the cover and cook an additional 15 to 20 minutes, until cheese begins to brown.

7. Enjoy!!
