I can never turn down a good casserole recipe and this is why I love making this Chili Hashbrown Casserole. It’s a hearty meal that gives my big family the fuel and energy needed to get through the day. I love the flavors and texture of this simple casserole dish as well. (and all the cheese is divine, too!)

The next time you’re needing comfort food, this simple casserole recipe is ready. It’s delicious, simple, and certain to give you a wonderful meal that fills your belly. I try to add this to our meal planning rotation at least once a month because it’s just that good!

When you’re craving chili and substance, I can’t recommend this casserole dish any more. It’s one of those easy recipes that will have you filling up your belly and snuggling down for the night.

And while I’m a huge fan of chili, I’m also a huge fan of lots of hash browns and cheese, too. It was for that reason that this recipe was created, and loved by all.

To be honest, even though this is technically a lunch or dinner recipe, I wouldn’t hesitate for a second to eat this for breakfast. There’s just something wonderful about the flavors that are just about perfect for any time of day.

Grab a bowl or plate and get ready to fill it fully because this simple cheesy hash brown recipe is one that you’re going to obsess over as I do!

Chili Hash Brown Casserole

Makes 6 servings
Prep time: 30 minutes
Cook time: 30 minutes

Ingredients:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 10.25-ounce can diced tomatoes with chilies
  • 1 15-ounce can kidney beans
  • 1 8-ounce can tomato sauce
  • 1 cup beef broth
  • 1 packet chili seasoning mix
  • 4 cups frozen shredded hash browns
  • 1 cup shredded cheddar jack cheese
  • Salt and pepper

Instructions:

1. Preheat the oven to 400 degrees and grease an 9×13 baking dish with nonstick cooking spray.

2. In a large skillet, brown the ground beef with the onion.

3. When the beef is cooked through, stir in the tomatoes with chilies, kidney beans, tomato sauce, broth, and chili seasoning. Stir to mix and reduced heat. Allow the mixture to simmer until the sauce begins to reduce, around 10 minutes.

4. Spread the hash browns in an even layer in the baking dish and season with salt and pepper.

5. Top the hash browns with the chili mixture. Cover with foil and bake in the preheated oven for 20 minutes, then remove the cover and top with cheese. Continue baking for 10 minutes, until the cheese is melted.

6. Enjoy!!
