I like to think of these Chocolate Peanut Butter Cupcakes as a powerful trio of flavors. Every single bite is not only moist with that delicious cupcake texture but then you also get the perfect ratio of peanut butter and chocolate as well. Dare I say that these homemade cupcakes are one of my absolute favorite treats?

I love that in less in an hour of time, I can have homemade cupcakes waiting “patiently” on my counter, just waiting for me to jump in and eat. And since this recipe whips up 24 cupcakes, it’s more than enough for my family to enjoy sharing, too! Because the last thing that we need is to have a cupcake war in our house because there are far too few cupcakes to go around!

Did I fail to mention the best part of these delicious cupcakes? The middle is stuffed with a surprise and the topping is literally a swirl of peanut butter frosting and chocolate frosting combined! Seriously – is this real life?

The biggest reason that we make cupcakes in our house is that it means that every single person gets to have their own dessert that’s the perfect uniformed size. I don’t have to worry about equalling cutting a piece of cake or dividing up the last piece of fudge or anything crazy like that. The kids get to pick their cupcake, grab it, and run off enjoying their treat.

And can we all stop and love the fact that cupcakes are fewer dishes for me to clean, too?! They require no plates, no bowls, nothing! Just peel off that cupcake liner and enjoying it!

Chocolate Peanut Butter Cupcakes

Makes 24 cupcakes
Prep time: 30 minutes
Cook time: 25 minutes

Ingredients for the cupcakes:

  • 2 ¼ cups flour
  • ½ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking soda
  • ¼ teaspoon salt
  • ½ cup butter softened
  • 1 ¾ cups sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 ½ cups buttermilk

Ingredients for the filling:

  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 2 tablespoons melted butter

Ingredients for the peanut butter frosting:

  • ¼ cup butter softened
  • ¼ cup creamy peanut butter
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Ingredients for the chocolate frosting:

  • ½ cup butter softened
  • ¼ cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 2 to 4 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions:

1. Preheat the oven to 350 degrees and line a muffin pan with liners.

2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

3. In a large bowl, beat together the butter and sugar until creamy.

4. Add the eggs one at a time, beating between each addition. Mix in the vanilla.

5. Alternate adding the dry ingredients and buttermilk, mixing between each addition.

6. Fill each cupcake liner 2/3 of the way full with batter and bake in the preheated oven for 20 to 15 minutes.

7. Allow the cupcakes to cool in the pan for five minutes, then transfer to a wire cooling rack to cool completely.

8. To make the filling, beat together the peanut butter, powdered sugar, and melted butter until smooth and well combined. Add the mixture to a piping bag. Scoop out a small hole in the center of each cupcake and pipe the peanut butter mixture into the hole.

9. Make the peanut butter icing by beating together the butter, peanut butter, powdered sugar, milk, and vanilla until smooth and well combined.

10. Make the chocolate icing by beating together the butter, cocoa powder, powdered sugar, two tablespoons of milk, and vanilla until smooth and well combined. Add more milk, if needed, to thin the icing.

11. Place each icing flavor in a small piping bag and cut the tip off each bag. Place a large piping tip in the bottom of a large piping bag and put the tips of the two smaller piping bags inside. Swirl the icing on top of each cupcake.
