Just wait until you taste this Christmas Sheet Cake. It just might become your new favorite dessert. Not only is it loaded down with flavor but it is going to be one of the moistest cakes you’ve ever eaten. I love that this cake recipe is red, just like the red and green colors of the holiday season. (and even though I’m missing the green, you could always add on a few sprinkles to make that happen!)

I’m always surprised at how much I love red velvet cake. I find it funny also how many people don’t know that red velvet cake is really chocolate cake! For me, I think the icing is what really seals the deal. Topping this delicious cake with cream cheese frosting is one of the best combinations, ever.

Since this makes such a large cake, it’s great for Christmas break so everyone can enjoy multiple pieces over and over again. Put it into an airtight container to keep the air out so that it doesn’t dry out the cake!

Red Velvet Christmas Sheet Cake

Makes one 11×7 sheet cake
Prep time: 30 minutes
Cook time: 30 minutes

Ingredients:

  • 2 ½ cups flour
  • ¼ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup butter softened
  • 1 ½ cups sugar
  • 1 cup sour cream
  • 2 eggs
  • 1 cup buttermilk
  • 1 2-ounce bottle red food coloring
  • 1 teaspoon vanilla
  • 2 teaspoons baking soda
  • 2 teaspoons vinegar

For the Icing:

  • 8 ounces cream cheese, softened
  • ½ cup butter softened
  • 1 teaspoon vanilla
  • 4 cups powdered sugar
  • 3 to 4 tablespoons heavy cream

Instructions:


1.Preheat the oven to 350 degrees and line an 11×7 baking sheet with parchment paper. Grease the paper and edges of the pan with nonstick cooking spray and set aside.


2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.


3. In a separate bowl beat together the butter and sugar. Add the sour cream and eggs and beat until smooth.

4. Combine the buttermilk, red food coloring, and vanilla.

5. Add half the flour mixture to the butter mixture and beat to combine. Add half the buttermilk mixture and beat to combine. Mix in remaining flour mixture until combined, then mix in the remaining buttermilk mixture.

6. In a small bowl, combine the baking soda and vinegar. Add to the batter and fold until just combined.

7. Spread the mixture over the prepared baking sheet and bake in the preheated oven until a toothpick inserted in the center comes out clean, 25 to 30 minutes.


8. Remove from the oven and allow to cool on a wire cooling rack until cooled completely.


9. When the cake is cool, make the icing by beating together the cream cheese and butter. Add the powdered sugar and half the heavy cream and beat to combine. Add more milk, ½ tablespoon at a time, to thin the icing to the desired consistency.

10. Spread icing over the top of the cake.

11. Cut into square and enjoy!
