My kids tend to think that this is the main meal in itself and who am I to disagree? I am just happy to have a recipe as fast and simple as this that they love – and I’ll happily cook this up in the crock pot time and time again.
Because in my mind, you can never have too much cheese with your potatoes. This recipe is loaded with cheese and loaded with potatoes.

Be certain to check out my BBQ Potato Wedges for another awesome potato dish. We cook this one a lot during the summer months because it literally pairs up with everything!
The best part about this simple potato recipe is that you can pair it up with any type of dish. It’s great with pork, chicken, beef, and anything vegetarian as well. I’ve literally made this with about a dozen different dishes and there’s never anything left for later.
The slow cooker does a great job in making the potatoes fork tender so that they have the perfect potato texture as well. All you have to do is add in the six simple ingredients and wait for the crock pot to do its thing!
