Let’s just all agree that making anything in the crock pot is one of our best helpers in the kitchen. I ALWAYS use this recipe for Crock Pot Lasagna because it’s a great way to make lasagna with minimal work and effort on my part. And it’s not like lasagna is complicated…but it does tend to be a bit of a time-consuming recipe. But when I use the crock pot? It’s literally a total breeze!

This recipe has saved me time and time again when I was craving a hearty meal but felt like I just didn’t have the time to happen. Taking care of a big family is amazing but some days I just run out of time! I love using my slow cooker for weeknight meals because I can literally set it, and forget it. And to be, cooking up this lasagna in the crock pot is a tasty way to feed the family and save my sanity as well.

The other thing that I really love about this slow cooker lasagna is that it’s really, really flavorful. Once I scoop it out of the slow cooker, I have no doubt that every single family member is going to clean their plate. Just put out the parmesan cheese and let them add to it as they please!

And if you’re lucky enough to have any leftovers, it tastes like a dream the next day, too. We always have a bit of a “fight” in our house about who gets the leftover lasagna which is why I’ve even seen some of the kids eat it for breakfast to be able to get it first!

Crock Pot Lasagna

Makes 6 servings
Prep time: 10 minutes
Cook time: 6 hours

Ingredients:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 24-ounce jars of marinara sauce
  • 1 15-ounce container ricotta cheese
  • 1 16-ounce container cottage cheese
  • 2 cups shredded mozzarella cheese, divided
  • 1 tablespoon Italian seasoning blend
  • 1 teaspoon garlic powder
  • 10 oven-ready lasagna noodles (uncooked)

Instructions:

1. Brown the ground beef with the onions and garlic in a skillet over medium heat. When the meat is cooked through, stir in the marinara sauce and remove from heat.

2. In a medium bowl, combine the ricotta cheese, cottage cheese, one cup of mozzarella cheese, Italian seasoning, and garlic powder.

3. Spread a layer of sauce in the bottom of the bowl of the crockpot. Top the sauce with two lasagna noodles. Spread more sauce over the top of the noodles, then top the sauce with the cheese mixture.

4. Continue layering noodles, sauce, and cheese mixture in the slow cooker, ending with a layer of noodles topped with sauce.

5. Cover the sauce layer with the remaining cheese and place the lid on the slow cooker. Cook on low for 6 hours or high for four hours. The lasagna is ready to serve with then pasta is cooked through.
