Farmers Market Chicken Skillet

This Farmers Market Chicken Skillet is hearty and delicious. Packed with veggies, chicken, and bacon, you can’t go wrong! This is so much fun to make because it has so many moving parts! I love adding in some of our fresh veggies from the garden or heading to the Farmer’s Market and picking them up.

If you’re looking for a dish that you can easily make for breakfast, lunch, or dinner – this is the one! I also love that you can make this skillet meal in one pan so that means that there is less clean up for later.

Be certain to check out my Zucchini and Rice Skillet Dinner for another super simple dinner recipe.

One other big factor that makes this dish awesome is that it’s ready in just 30 minutes of cooking time. When I have hungry kids with hungry mouths, time is of the essence. There’s nothing like having dinner on the table when you’re not having everyone waiting forever!

I also think that it’s super simple to add in other vegetables to this easy skillet dish. It’s a fun recipe that is fast and simple and I love the added flavoring that the bacon adds.

Don’t forget that you can always add a topping of sour cream or even some shredded cheese on top to complete the dish! And if you like spicy, salsa is a good topping choice, too!

Farmer’s Market Chicken Skillet

Makes 5 servings
Prep time: 15 minutes
Cook time: 30 minutes

Ingredients:

  • 5 strips bacon, chopped
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 5 red potatoes, diced
  • 1 cup fresh green beans
  • 1 ear of corn, kernels removed
  • 1/2 tablespoon each fresh thyme, basil, oregano, and parsley, finely chopped
  • Salt and pepper
  • 1-2 tablespoons vegetable oil (optional)

Instructions:

1. Add bacon to a large skillet and cook over medium heat until crisp.

2. Transfer the cooked bacon to a paper-towel-lined plate and add the chicken, onion, bell pepper, garlic, potatoes, green beans, and corn to the pan.

3. Stir to combine all the ingredients and season with fresh herbs.

4. Place a lid on the pan and cook for 15 minutes, until the potatoes are tender and the chicken is cooked through. Stir the ingredients occasionally to prevent them from sticking to the pan. If the ingredients are sticking too much, add 1-2 tablespoons vegetable oil and stir to coat.

5. Remove the lid and reduce heat to medium-low. Simmer until the liquid in the pan has been reduced, stirring often.

6. Season with salt and pepper as needed before serving.

7. Enjoy!!
