Are you looking for a simple way to cut the carbs but still have the “noodle” texture? This Garlic Shrimp Zoodles recipe is just what you need! While it looks like there are noodles in your bowl, it’s just perfectly spiraled “noodles” for the win!

Sometimes, we try to cut out some of the carbs if possible and get some extra veggies in the kids. When this happens and we just set out a plate of veggies, they tend to overlook them and don’t want to partake. But when we whip up some zucchini zoodles and this recipe, they’ll even come back and ask for more!

I think it’s the combination of the garlic and shrimp, but I have to admit that the texture of the dish is pretty great as well.

Garlic Shrimp Zoodles

Don’t let this recipe fool you. While it’s a favorite out there for adults who are eating healthier and trying to cut the carbs, it’s also a dish that the kids like as well. Combining it with a pound of delicious shrimp and a tad bit of garlic and butter makes it taste like it literally was created in a restaurant instead of right in your very own kitchen.

You might have to make this recipe a couple of times to get your noodles at the consistency that you want but it’s worth it, I promise. Some people like their zoodles a bit more crunchy while others prefer them not to be.

How you want to make them up and serve them for your family is totally up to you! (and make certain to take turns making the zoodles – they’re a lot of fun to create!)

Prep Time: 10 Minutes
Cook Time: 20 Minutes
Serves: 4

Ingredients:

  • 1 Pound Uncooked Detailed and Deveined Medium Shrimp
  • 4 Small Zucchini
  • 4 Tablespoons Garlic, minced
  • 4 Tablespoons Butter
  • Salt and Pepper, to taste

Directions:

1.Using a zoodle maker (can be bought at most stores), cut all four zucchini using the noodle cut.

2. In a large skillet, place half of the butter and half of the garlic. Saute for about one minute, then add in the zoodles. Saute for about 7-10 minutes or until zoodles reach desired texture. Remove from skillet and set aside.

3. Rinse and pat down the shrimp.

4. Place the rest of the garlic and butter in the skillet, saute for a minute and add in the shrimp. Cook until shrimp turn pink.

5. Place the shrimp in the bowl with the zoodles, toss with salt and pepper.

6. Enjoy!
