‘Tis the season to bake up these Gingerbread Cookie Bars. They’re one of my favorite flavors of the holiday and I’m always excited to make them every year. There’s just something about that cream cheese frosting that has me coming back for another piece, time and time again. I also really love how soft the texture of these cookie bars are as well. It’s like they almost melt in your mouth once you take a bite.

And if you’re a fan of cookie bars and all things sweet, you’re not going to want to miss out on our Reindeer Cookie Bars either. This is another simple holiday dessert that you have to have on your baking radar!

The other big reason that I’m a big fan of this gingerbread dessert is that it doesn’t take long to make. With only 15 minutes of cook time, I know without a doubt that I can have these homemade cookie bars ready for the kids once they’re done with schooling or coming indoors from an afternoon of exploring outside.

I’ve also learned that cookie bars are just really fun to eat, too. Technically they’re not a cookie and they’re not cake but they’re literally the perfect combination of the two. Do you eat them with your hands or do you use a plate and eat it with a fork? That’s totally up to you but I will admit that I’ve done it both ways and either way works perfectly fine!

Don’t forget that we also love to make other sweets in our house as well as these Christmas Cookies prove. Because a happy home and a full tummy is truly a wonderful combination to have!

Gingerbread Cookie Bars

Makes 9 cookie bars
Prep time: 20 minutes
Cook time: 15 minutes

Ingredients:

  • 1 ¼ cups flour
  • ½ tablespoon cornstarch
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ½ cup butter softened
  • ¼ cup of sugar
  • ¼ cup molasses
  • 1 egg

For the icing:

  • 4 tablespoons butter, softened
  • 4 ounces cream cheese, softened
  • ½ teaspoon vanilla extract
  • 1 cup powdered sugar
  • ½ tablespoon milk
  • Red and green sprinkles

Instructions:

1.Preheat oven to 350 degrees and grease an 8×8 pan with nonstick cooking spray.

2. In a medium bowl, whisk together the flour, cornstarch, baking powder, salt, ginger, cinnamon, and nutmeg. Set aside.

3. In a separate bowl beat together the butter, sugar, and molasses until smooth and creamy. Add the egg and beat until combined.

4. Add the dry ingredients to the butter mixture and mix until a thick dough forms.

5. Press the dough into the prepared pan and bake in the preheated oven for 12 to 15 minutes.

6. Remove from oven and allow to cool completely before icing.

7. To make the icing, beat together the butter, cream cheese, vanilla, powdered sugar, and milk until smooth and well combined.

8. Spread over the top of the cookie bars and decorate with sprinkles.

9. Cut the bars into squares before serving.
