If I could find a way to cook everything that I love and want in my Instant Pot, I would. You may have noticed a trend with me about Instant Pot recipes…and I don’t plan on stopping anytime soon! This Instant Pot Apple Pumpkin Cake is my latest obsession and I seriously cannot get enough!
When you think of Fall weather, the two flavors of apple and pumpkin pop into mind. What I love about this cake is that it combines BOTH flavors into a flavor explosion that will change everything you thought you knew about Fall treats.
As long as I can remember, it’s always been that you had to choose one or the other: apple OR pumpkin. But this cake changed that, and did the unthinkable of combining them together!
And let me tell ya…it works. Once that temperature gets below 80 degrees, it’s Fall time in my mind and I start prepping myself and my Instant Pot for this delicious cake. Once the smell starts wafting through the house, everyone knows that it’s “officially” Fall as well.

Instant Pot Apple Pumpkin Cake Instructions
Ingredients:
- 1/2 can pumpkin puree 15 oz., about 1 cup
- 1/2 tsp cinnamon
- 1/2 tsp pie spice
- 1 1/2 cups sugar
- 2 eggs, room temp
- 1/2 cups coconut oil
- 1/4 cups apple cider
- 1/2 cup apples, peeled, hull removed and diced
- 1 1/2 c all purpose flour
- 1 tsp baking soda
Topping:
- Cream cheese frosting
- Crushed walnuts for garnish
Directions:
- Spray the inside of your bundt pan with nonstick spray.
- Set to the side.
- Slowly add in dry ingredients and continue to mix on low to combine.
- Remove the bowl from the stand mixer.
- Put aluminum foil over the top of your bundt pan.
- Put a trivet inside your Instant Pot.
- Pour 2 cups of water in the bottom of your Instant Pot.
- Put the lid on and set to manual.
- Do a natural release.
- Then carefully lift the lid, and remove the lid.
- Remove the bundt pan and set to the side.
- Remove the foil.
- Allow the cake to cool before flipping over.
- ENJOY!!
Instant Pot Apple Pumpkin Bunt Cake
Ingredients
Ingredients:
- 1/2 can pumpkin 15 oz. about 1 cup
- 1/2 tsp cinnamon
- 1/2 tsp pie spice
- 1 1/2 cups sugar
- 2 eggs room temp
- 1/2 cups vegetable oil
- 1/4 cups apple cider
- 1/2 cup apples peeled, hull removed and diced
- 1 1/2 c all purpose flour
- 1 tsp baking soda
Topping:
- Cream cheese frosting
- Crushed walnuts for garnish
Instructions
- Spray the inside of your bundt pan with non-stick spray.
- Set to the side.
- In a medium bowl add your flour, baking soda, whisk to combine.
- In a bowl of a stand mixer add your pumpkin, cinnamon, sugar, eggs, oil, apple cider, and pie spice.
- Mix on low to fully combine.
- Slowly add in dry ingredients and continue to mix on low to combine.
- Remove the bowl from the stand mixer.
- Add diced apples and lightly stir to combine. Do not over stir.
- Pour your mixture into the bundt pan, 3/4 of the way full.
- Put aluminum foil over the top of your bundt pan.
- Put a trivet inside your Instant Pot.
- Pour 2 cups of water in the bottom of your Instant Pot.
- Put the lid on and set to manual.
- High pressure, for 25 minutes.
- Do a natural release.
- Then carefully lift the lid, and remove the lid.
- Remove the bunt pan and set to the side. Remove the foil.
- Allow the cake to cool before flipping over.
- Top with a cream cheese frosting and crushed walnuts.
- ENJOY!!
