If you don’t own an Instant Pot yet, you absolutely need to. (trust me, this Instant Pot Chicken Bacon Ranch Casserole needs to happen!) Put it on your Christmas list, birthday list, or any other holiday list coming up that you normally get a gift for, and make it yours! I can’t explain to you in words how much I love my Instant Pot and all the amazing recipes that I cook in it.
Finding ways to feed my family that are delicious was always a bit of a challenge before I starting using the Instant Pot. Now, every time I use it, they have a new family-favorite dish!
The rave reviews that I received from them for this Instant Pot Chicken Bacon Ranch Casserole is yet another reason that I love using my Instant Pot. And did I mention that there is minimal work AND clean up involved with each and every recipe?
In just mere moments, I was able to make this casserole and have it ready to go for my always-active family. It was simple, it cooked to perfection and there wasn’t a bite remaining on any plate it was dished on.
What are you waiting for? You’ll be amazed at just how simple this Instant Pot Chicken Bacon Ranch Casserole dish truly is!
- 1 pound of bacon chopped
- 2 tablespoons of extra virgin olive oil
- 1 tablespoon butter
- 1 tablespoon minced garlic
- 1 pound of chicken cut into bite sized pieces
- 3 cups chicken broth or stock
- 1 small can of cream of chicken or mushroom soup
- 1/2 cups of milk
- 4 ounces of cream cheese cut into cubes.
- 1 tablespoon of onion powder
- 1 package of ranch dressing mix
- 1/2 package (8 oz.) of any small dried pasta (we used mini bow ties)
- Shredded cheddar cheese
Step 1: Set Instant pot to sauté function. Add 1 tablespoon of olive oil and bacon. Cook bacon until crispy. Set bacon aside. If you want to use the bacon grease for the next step, or you can drain it.
Steps 3-6: Add remaining olive oil, butter, garlic, and chicken. Stir often, until chicken is brown, but not cooked all the way through.
Steps 7-9: Add soup and milk to the broth and mix well. Pour into the pot.
Step 10: Add cream cheese.
Steps 11-12: Add onion powder and ranch.
Step 13: Add pasta.
Step 15: This step is optional! My husband likes his cheese on the Chicken Bacon Ranch Casserole to be melted in the oven in a casserole dish. If you don’t want to do that, just add the cheese in step 14 and allow to melt.
