Instant Pot Ham, Potato, and Corn Chowder

Soup season is one of my favorite times of the year. This Instant Pot Ham, Potato, and Corn Chowder recipe is always at the top of my list. Every spoonful of soup is full of the perfect balance of ingredients that will literally have you scraping the bottom of the bowl.

This soup recipe is one that my family loves – and for good reason. The salty ham and the chunks of potatoes paired with the sweetness of the corn create a flavor that you just can’t beat. I love to add some crushed-up crackers and shredded cheese to the top of my bowl but the kids prefer to add their own unique toppings. That’s the beauty of soup!

Being able to use your Instant Pot to make soup is a fast and simple cooking method. I love that this soup recipe takes literally 30 minutes of time to cook. This means that I can cook it up fast, even when we’re having a super busy night.

Some people prefer a thicker-based soup but I think that the consistency of this soup recipe is just about perfect.

Once you start to add the ingredients to the Instant Pot, the house is going to be smelling like soup in no time at all! This simple soup recipe is a delicious chowder recipe that is loaded with wonderful flavor.

Since this recipe makes a large batch of soup, you’ll have some leftovers for the next few days as well! I call that a meal planning win!

Instant Pot Ham and Potato Corn Chowder

Makes 6 servings
Prep time: 10 minutes
Cook time: 15 minutes
Pressure time: 30 minutes

Ingredients:

  • 1 tablespoon butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 32 ounce container chicken broth
  • 3 russet potatoes, peeled and diced
  • 1 12 ounce package frozen corn
  • 2 cups diced ham
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 ½ cups heavy cream
  • 2 tablespoons cornstarch combined with 2 tablespoons cold water

Instructions:

1. Set the Instant Pot to saute mode and add the butter. When the butter is melted, add the onion and saute for two minutes, then add the garlic. Cook until the onion is translucent.

2. Turn off the Instant Pot and add the chicken broth. Scrape a spoon along the bottom of the pot to loosen stuck-on pieces of onion and garlic.

3. Add the potatoes, ham, and corn. Season with salt and pepper and stir to combine.

4. Place the lid on the Instant Pot and set to cook on high pressure for 15 minutes.

5. When the cooking time is up, do a quick release and remove the lid.

6. Set the pot to saute, then add the heavy cream and cornstarch slurry. Stir and allow the mixture to simmer for five minutes or until thickened.

7. Enjoy!!
