Not only does the Instant Pot cook it perfectly but it does it quickly, too! When you have hungry mouths to feed, you’re going to love this easy chicken and rice recipe and how fast and simple it is.

While it does make a lot of food, there’s a high probability that you’re not going to have much leftover. There’s a very good chance that the kids are going to gobble it all up!

The biggest reason that I love this Instant Pot recipe (besides the flavor) is that it’s ready in less than 30 minutes of time. This means that I can have a hearty meal on the table fast and everyone will think that it took me all day to make it.

But between you and me, this is one cooking secret that we’ll happily keep to ourselves. Because while it’s cooking in the Instant Pot, it’s fun to take that time for yourself and put your feet up, too!

Another great aspect of this rice and chicken dish is that it’s combined perfectly to be an entire meal. You can easily serve up a side salad to go with it but you really don’t have to if you don’t want to.

Instant Pot Parmesan Garlic Chicken and Rice

Makes 4 servings
Prep time: 10 minutes
Cook time: 8 minutes
Pressure release time: 10 minutes

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup onion, finely chopped
  • 3 cloves garlic, minced
  • 1 ¼ cups chicken broth
  • 1 cup white rice
  • 2 boneless, skinless chicken breasts
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon dried sage
  • ½ teaspoon dried basil
  • 1 cup shredded parmesan cheese
  • Salt and pepper

Instructions:

1. Set the Instant Pot to saute and add the olive oil. When the oil is hot, stir in the onion and cook until translucent. Add the garlic and cook an additional minute, then turn off the Instant Pot.

2. Stir in the chicken broth and scrape the bottom of the pan with a spatula.

3. Add the rice and stir to combine all the ingredients.

4. Place the chicken on top of the rice and season with parsley, oregano, sage, basil, salt, and pepper.

5. Put the lid on the Instant Pot and set to cook on high pressure for eight minutes. When the cook time is up, do a natural release for 10 minutes, then do a quick release to release remaining pressure.

6. Remove the lid and take the chicken out of the pot. Turn off the Instant Pot. Shred the chicken with a fork and return it to the pot.

7. Top with parmesan cheese and stir until the cheese is melted and well mixed.

8. Enjoy!
