Get ready to love these Lemon Blueberry Cupcakes. Not only are they loaded down with lemon AND blueberry flavor, but they’re moist and delicious as well. I love having the creamy frosting on top and the hidden blueberry middle of the cupcake as a fun surprise for the kids.
Their faces are priceless when they bite into these cupcakes and discover the blueberry filling. Sweets and treats with hidden surprises are always a good idea! These cupcakes are my standard go-to cupcakes for Spring because of how they have that nice, Citrus flavor and taste. They just taste light and airy which is exactly how the spring and summer weather feels, too.

If you’re a fan of cupcakes, don’t miss out on these Mouthwatering Strawberry Cupcakes with Strawberry Buttercream Icing. This is another easy cupcake recipe that is loaded down with that fresh fruit flavor.
Make certain that you pay close attention to these cupcakes when you’re baking them as you don’t want to risk overcooking them. While they’d still be edible, they’d more than likely be dried out and lose some of that delicious and fluffy texture that you’ll love. The toothpick test is the best bet to make certain that your cupcakes are done baking and it’s never let me down yet.
All you need to do is stick a clean toothpick down into the middle of the cupcake. If it comes out clean, it means that the cupcakes are done baking and need to be taken out of the oven. If the toothpick has batter on it, leave the cupcakes in for a couple of minutes and test again with a new toothpick.
Use this same testing method on these Chocolate Peanut Butter Cupcakes as well. So many cupcakes to bake and eat, so little time to do so!
Lemon Blueberry Cupcakes
Makes 24 cupcakes
Prep time: 1 hour
Cook time: 20 minutes
Ingredients for the cupcakes:
- 3 cups flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- 1 cup butter, room temperature
- 2 cups sugar
- 4 eggs, room temperature
- 1 teaspoon lemon extract
- 2 tablespoons lemon juice
- 2 tablespoons lemon zest
- 1 cup milk

For the blueberry filling:
- 2 cups fresh blueberries
- 1 cup cold water combined with ¼ cup cornstarch
- 1 cup sugar
- 1 tablespoon lemon juice
- For the lemon frosting:
- 1 cup butter, softened
- 1 teaspoon lemon extract
- 1 tablespoon lemon juice
- 4 cups powdered sugar
- 3 to 4 tablespoons milk
Instructions:
1. Preheat the oven to 375 degrees and line a muffin pan with paper liners.
2. Whisk together the flour, baking powder, and salt. Set aside.

3. In a separate bowl, beat together the butter and sugar until smooth and creamy.

4. Add the eggs one at a time, beating between each addition. Mix in the lemon extract, lemon juice, and lemon zest until combined.

5. Pour in half the flour mixture and mix. Then, mix in ½ cup of milk. Beat in the remaining flour mixture followed by the remaining milk.

6. Fill each cupcake liner 2/3 of the way full of batter and bake in the preheated oven for 17 to 20 minutes, until a toothpick inserted in the center comes out clean.

7. While the cupcakes are cooling, make the blueberry filling by combining the blueberries, cold water and cornstarch, sugar, and lemon juice in a saucepan. Heat over medium heat until boiling, then reduce heat and simmer until thickened, around 10 minutes, stirring occasionally.

8. Allow the filling to cool completely, then cut a small hole in the center of each cupcake and spoon the mixture into the opening.

9. Make the frosting by beating together the butter, lemon extract, and lemon juice. Add two powdered sugar and two tablespoons of milk and beat to combine. Add the remaining powdered sugar and one tablespoon of milk. Beat until combined. If the icing is too thick, add more milk until the desired consistency is reached.
10. Pipe the frosting on top of the cupcakes and garnish with fresh blueberries.
