Lemon Meringue Poke Cake

Anytime I make this simple lemon cake recipe, the kids come sprinting for the table. This is one of those desserts that you don’t want to have to wait to eat so I always give in and on those days, we eat our dessert first! Because why limit yourself when something this delicious and wonderful is sitting there, waiting for you to enjoy?

The other great part about this simple cake recipe is that you get to cut a few corners and use a boxed cake mix. I don’t call this “cheating” at all – I call it thrifty thinking for a busy momma!

When I’ve got a full schedule and hungry kids, this fast and easy cake recipe is my go-to recipe. It serves up to 12 people (or 8 if you cut the slices big!) and is a a great way to feed the kids easily.

I’ve also whipped this up for family gatherings, summer BBQs, and a simple dessert for brunch as well. I tend to really crave lemon desserts during the summer months and I just love how refreshing and wonderful this meringue cake is.

The kids like to help poke the holes in the cake for this recipe, too! And I’m all about having some extra help in the kitchen!

Lemon Meringue Poke Cake

Makes 12 servings
Prep time: 20 minutes
Cook time: 30 minutes

Ingredients:

  • 1 box white cake mix, prepared in a 9×13 pan
  • 1 21-ounce can lemon crème pie filling
  • 1 1/3 cup sugar, divided
  • ¼ teaspoon cream of tartar
  • 5 tablespoons water
  • 4 egg whites, room temperature

Instructions:

1. Use the end of a wooden spoon to poke holes in the cake.

2. Spread the pie filling over the top of the cake, making sure to press the filling into the holes.

3. Prepare the meringue topping by heating 1 cup sugar, cream of tartar, and water in a small saucepan over medium heat. Bring to a boil and simmer for 5 minutes, stirring constantly, until the sugar is dissolved.

4. While the syrup is cooking, beat the egg whites on high until soft peaks begin to form.

5. Slowly add the sugar while still beating. Continue beating until the meringue thickens.

6. When the syrup is finished cooking, slowly pour it into the bowl while beating on low.

7. Continue beating until the meringue is cool to the touch.

8. Spread the mixture over the top of the cake and heat under the broiler for one to two minutes, until the top is toasted.

9. Allow to cool and serve immediately.

10. Enjoy!
