This Low Carb Taco Casserole is literally the perfect way to start the year. Not only is it low in carbs (yay!) but it’s packed full of s much flavor, too. The great part is that it makes a large serving size so this is one dish that you’ll be able to enjoy over and over again.

I’ve made this several times in our household and it’s always a popular choice. The boys like that they can add a few spices and heat and change up the flavor of the dish and I love that everyone has that option to change it up and make it taste like their own.

This taco casserole is also a super fun recipe to make together. Everyone can easily join in on the fun and help to prep this meal. I like to vary this taco dish a bit and put in different flavors of cheese here and there but that’s an option that you don’t have to do.

I also really love the fact that I can make this dish and have it on the table in less than an hour of time. It’s been one of our go-to dishes during the week when we’re busy and are looking for simple comfort food that we know is going to taste great.

One variation for this casserole recipe is that you could use ground turkey or ground chicken as well if you’re wanting to cut down on some of the fat. That’s always an option and you really wouldn’t even notice the change in the taste or flavoring because the added taco seasoning really takes care of that and keeps it similar.

Low Carb Taco Casserole

Makes 6 servings
Prep time: 15 minutes
Cook time: 35 minutes

Ingredients:

  • 8 ounces cream cheese, softened
  • 2 eggs
  • 1 packet taco season, divided
  • 1 ½ cup shredded taco blend cheese divided
  • 1 pound ground beef
  • 1 small onion, diced
  • 1 jalapeno pepper, deseeded and diced
  • 1 10-ounce can diced tomatoes with green chilies
  • 1 cup shredded lettuce
  • 1 tomato, diced
  • Green onion for garnish

Instructions:

1. Preheat the oven to 375 degrees and prepare a 9×13 baking dish by greasing it with nonstick cooking spray.

2. In a large bowl, beat together the cream cheese, eggs, 1 teaspoon taco seasoning, and ½ cup shredded cheese until smooth.

3. Spread the mixture evenly in the bottom of the baking dish and bake in the preheated oven for 25 minutes.

4. While the cream cheese mixture is baking, brown the ground beef with the onion in a large skillet.

5. When the meat is cooked through, add the remaining taco seasoning, jalapeno, and diced tomatoes with chilies. Stir to combine and cook on medium-low until the liquid from the tomatoes has been reduced. Remove from heat.

6. When the cream cheese mixture is golden brown, remove it from the oven. Spread the meat mixture over the top of the crust in an even layer. Top with remaining shredded cheese.

7. Return the casserole to the oven and cook for 10 minutes, until cheese on top is melted.

8. Top with shredded lettuce, tomatoes, and green onion before serving.

9. Enjoy!!
