If you’re looking for a super delicious dinner recipe that will have everyone thinking you brought home take out, you’re going to love this mouthwatering chicken fried rice. Not only is it super simple, but it has such an awesome flavor, too!

With less than 10 ingredients needed, it’s really quite easy to whip up. You might even feel like you have some chef skills with the outcome of this dish. You’ll have people asking for seconds before they even finish their first serving. It’s just that good.

We enjoy eating chicken fried rice from local Chinese restaurants, however, after some of them have been closed down due to Ummm…not using well-sourced meat sources. Knowing this, we decided to work out different recipes until we found one we liked.

And since we knew that fried rice was a favorite dish among our family, the pressure was on to make it perfect! (Who knew that cooked and fried rice can have so many different tastes?!)

After many failed attempts of ever tasting somewhat similar to the restaurants, we thought maybe we would never find the right recipe. I am so happy to say that after many trials and errors we have finally found the perfect chicken fried rice recipe.

It is healthy, super easy to make, and I can even say better than any we could get from a restaurant. I hope you and your family enjoy this recipe just as much as we do!

Delicious Homemade Chicken Fried Rice

Ingredients

  • 12 Eggs
  • 5-6 TBS Oil (we use coconut)
  • 1 1/2 pounds cooked chicken diced or shredded
  • 1 1/2 Cups Mixed vegetables
  • 5 Cups of Cooked Rice
  • 2 TBS Soy sauce

Directions

1. Melt 3 TBS of coconut oil in a skillet and scramble up your eggs adding some salt and pepper to taste. Once your eggs are cooked remove from skillet and put into a separate bowl.

2. Next, melt 2-3 TBS of coconut oil in the skillet and fry up your cooked chicken and mixed veggies for a couple of minutes.

3. Add in the chicken broth and simmer the vegetables for about 10 minutes, or until the veggies are good and cooked. If your using fresh veggies instead of frozen you will want to alter the cooking time accordingly.

4. Pour your cooked rice and scrambled eggs into the veggies mix up good.

5. Finally, add in the soy sauce and mix it all in until thoroughly mixed together. Add in salt and pepper to taste.

6. Enjoy!

  • 1 ½ Cups Frozen Mixed vegetables We use frozen bagged mixed veggies from Costco
  • salt and pepper to taste
  • Cup Chicken Broth
  • 5 Cups Cooked rice
  • 2-3 TBS Soy Sauce We love using the low sodium soy sauce

Instructions

  • Melt 3TBS of coconut oil in a skillet and scramble up your eggs adding some salt and pepper to taste. Once your eggs are cooked remove from skillet and put into a separate bowl.
  • Next, melt a couple of 2-3 TBS of coconut oil in the skillet and fry up your cooked chicken and mixed veggies for a couple of minutes.
  • Add in your chicken broth and simmer the vegetables for about 10 minutes, or until the veggies are good and cooked. If you're using fresh and not froze veggies shorten up your cooking time accordingly.
  • Pour your cooked rice and scrambled eggs into the veggies mix up good.
  • Finally, add in the soy sauce and mix it all in until thoroughly mixed together.
  • Enjoy!
