Mouthwatering Strawberry Cupcakes with Strawberry Buttercream Icing

The really great part of these cupcakes is that you get to use fresh strawberries in the mix. And if you happen to have your own garden, adding in your own grown strawberries is such a fun bonus!

The longest part of this recipe is getting the strawberries cooked down so that they’re not lumpy in the mixture. But trust me on this one…they’re totally worth the wait. We’ve probably all tried strawberry cupcakes that have that “fake” strawberry flavoring, right? Just wait until you taste how cupcakes made with real strawberries are supposed to taste.

Literally out of this world amazing. I’m so happy that this recipe makes 24 cupcakes because my kids grab them as soon as they’re cooked down and start eating them all!

Strawberry Cupcakes with Strawberry Buttercream Frosting

Make certain to let the cupcakes cool down completely before adding on the homemade frosting so it doesn’t melt and runoff. Then, enjoy every single strawberry flavored bite!

Makes 24 cupcakes
Prep time: 20 minutes
Bake time: 25 minutes

Ingredients for the Cake:

  • 2 cups strawberries
  • 1 cup butter, room temperature
  • 1 ¾ cup sugar
  • 1 teaspoon vanilla extract
  • 1 3-ounce package strawberry gelatin
  • 4 eggs, room temperature
  • 2 ¾ cup flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk, room temperature

Ingredients for the Buttercream Frosting:

  • 1 stick butter, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons strawberry puree (see instructions below)
  • 4 cups powdered sugar
  • 4 tablespoons milk


Instructions:

1.Preheat oven to 350 degrees and add liners to cupcake pan.

2. Puree the fresh strawberries and add to a small saucepan. Heat over medium heat until the strawberries begin to simmer. Reduce heat and simmer for around 20 minutes, until the mixture has reduced by half. Remove from heat and set aside.

3. In a large bowl, beat together the butter and sugar until light and fluffy.

4. Add the vanilla extract and strawberry gelatin and mix to combine.

5. Add the eggs one at a time, beating between each addition. Set the mixture aside.

6. In a separate bowl, whisk together the flour, baking powder, and salt. Add half the dry ingredients to the egg mixture and beat until combined.

7. Pour in half the milk and beat until mixed.

8. Add remaining dry ingredients and mix until combined.

9. Add remaining milk and beat.

10. Add two tablespoons of the reduced strawberries to the batter and stir to combine.

11. Pour the batter into the prepared cupcake pan, filling each cup 2/3 of the way full.

12. Bake in the preheated oven for 25 to 30 minutes. The cupcakes are done when a toothpick inserted into the center comes out clean.

13. Transfer the cupcakes to a wire cooling rack to cool.

14. While the cupcakes are cooling, prepare the buttercream by beating together the butter and vanilla. Add the remaining strawberry puree and beat to combine.

15. Add the powdered sugar one cup at a time, alternating between one cup of sugar and one tablespoon of milk.

16. When the cupcakes are cooled completely, top with buttercream icing.

17. Enjoy!
