No Bake Strawberry and Blueberry Cheesecake

This No Bake Strawberry and Blueberry Cheesecake is about to be your new favorite dessert. And the best part? You don’t have to preheat or turn on your oven at all. Life is good, right?

With the warm weather here and not going anywhere for a while, why not fill your bellies with some fresh delicious fruit? (that just so happens to be on top of a bed of creamy cheesecake!) There’s no better time to make a delicious fruit covered dessert than when the blueberries and strawberries are in season!

While we make this simple no bake cheesecake at all times of the year, it really is another level during the summer months. The kids love being able to pick their own strawberries and blueberries for this simple dessert and help prep them to get ready to eat.

Not only does it save me a trip to the store but it helps to get some really good fruit options in their tummies, too. I don’t mind them snacking away on fruit bites at all! And since this cheesecake recipe isn’t but a few other simple ingredients, this is really one of my favorite desserts for the kids to eat.

Just let it chill and get cold, and then slice a piece to enjoy. Sitting outside at the end of the day with a piece of this fruit cheesecake sounds just about perfect.

No Bake Strawberry and Blueberry Cheesecake

Makes 12 servings
Prep time: 15 minutes
Chill time: 4 hours

Ingredients:

  • 1 sleeve (9 full sheets) graham crackers, crushed
  • ¼ cup butter, melted
  • 2 tablespoons brown sugar
  • 2 8-ounce packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 8-ounce package frozen whipped topping, thawed
  • 8 ounces strawberries, chopped
  • 4 ounces blueberries
  • 1 teaspoon lemon juice
  • 1 tablespoon sugar

Instructions:

1.Add the graham crackers to a food processor and pulse until finely ground. Add the butter and brown sugar and pulse until the mixture resembles coarse sand.

2. Pour the graham cracker mixture into the bottom of a 9×13 baking sheet. Press the graham crackers into to the bottom of the pan until firm. Place the crust in the refrigerator to chill while you assemble the cheesecake mixture.

3. In a large bowl, combine the cream cheese, powdered sugar, and vanilla. Beat until well combined.

4. Fold in the whipped topping.

5. Spread the mixture over the top of the graham cracker crust in an even layer. Place in the refrigerator to chill for at least four hours.

6. When ready to serve, add the chopped strawberries, blueberries, lemon juice, and sugar to a large bowl. Toss to combine, then spread the fruit mixture over the top of the cheesecake.

7. Cut into bars and serve.

8. Enjoy!
