With fall happening, it’s time to start dreaming about all the pumpkin food items that you’re going to be baking and eating. Kick off the season of pumpkin with these delicious Pumpkin Caramel Bars with Caramel Frosting recipe. Not only is it a crazy good dessert that is loaded with that pumpkin flavor and taste but it also is topped with some of the creamiest and best caramel frosting, ever.

One of the best parts about this recipe is that the caramel frosting is homemade and it’s literally just two simple ingredients! Anytime I can cook with an easy recipe, I’m so excited to make it happen! I think you’re going to love this just as much as we do!

I’m going to let you in on a little secret. Even though it might be frowned upon to say this…we eat pumpkin-flavored items all year long in our house! Now that you know, I hope you’ll do it, too. Why limit the taste of pumpkin to just one time of year?

These dessert bars taste so good, you’re really going to have a hard time at stopping at just one. And since this recipe makes 9 bars, who says that you have to? You can easily bake these up and spend all weekend enjoying the entire pan yourself!

Caramel Pumpkin Bars with Caramel Frosting

Makes 9 bars
Prep time: 15 minutes
Bake time: 40 minutes

Ingredients for the Caramel Sauce:

  • 1/3 cup evaporated milk
  • 15 caramel squares

Ingredients for the Pumpkin Bars:

  • 1 cup all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup of sugar
  • ¼ cup brown sugar
  • ½ cup of vegetable oil
  • 1 15-ounce can pumpkin puree
  • 1 egg

Ingredients for the Frosting:

  • ½ cup (1 stick) butter, softened
  • ¼ cup caramel sauce
  • 2 cups powdered sugar
  • 2 to 3 tablespoons heavy cream

Instructions:

1.Make the caramel sauce by heating the evaporated milk and caramels in a small saucepan over medium heat. Stir the mixture constantly until the caramels are completely melted and well combined with the milk. Set the mixture aside.

2. Preheat the oven to 350 degrees and prepare an 8×8 baking pan by greasing with nonstick cooking spray.

3. In a medium bowl, whisk together the flour, pumpkin pie spice, cinnamon, salt, baking powder, and baking soda. Set aside.

4. In a separate bowl, beat together the sugar, brown sugar, and oil.

5. Add the pumpkin puree and egg and beat until well combined.

6. Add the dry ingredients and mix to combine.

7. Spread half the mixture in an even layer in the bottom of the prepared pan. Reserve ¼ cup caramel sauce for the frosting, then pour the remaining caramel mixture over the top of the pumpkin mixture.

8. Spoon the remaining batter into the pan, then use a knife to swirl the caramel sauce and pumpkin batter together in the pan.

9. Bake the pumpkin bars in the preheated oven for 35 to 45 minutes. The bars are done when a toothpick inserted in the center comes out clean.

10. Allow the cake to cool completely, then prepare the frosting by beating together the butter and reserved caramel sauce. Add the powdered sugar and two tablespoons of cream to the bowl and beat to combine. If the frosting is too thick, add an additional tablespoon of cream.

11. Spread the frosting over the top of the pumpkin bars, then slice into nine equal pieces to serve.
