This recipe is great because it’s homemade from start to finish. Not only do you get to make the filling, but you get to make the crust as well. The crust of this hand pie is flaky and pairs perfectly with seasoned ground beef.
This recipe is fun to make as a family as well. Each person in your house can even create their very own hand pies, too. Sometimes we like to sneak in a few extra ingredients to really change up the flavor and taste.
Since this recipe makes 8 hand pies, it’s a big recipe that can feed a family or make certain that everyone can have a second helping. One thing is for certain – everyone in the family is going to love the flavor and taste! This dinner recipe is so much fun to make and eat!
Pumpkin Shaped Cheeseburger Hand Pies
Makes 8 hand pies
Prep time: 20 minutes
Chill time: 30 minutes
Cook time: 25 minutes
Ingredients for the Crust:
- 2 ½ cups flour
- 1 teaspoon salt
- 1 cup butter, cubed and chilled
- ½ cup ice water
For the filling:
- 1 pound ground beef
- 1 teaspoon seasoning salt (Lawry’s)
- 1 teaspoon black pepper
- 3 tablespoons ketchup
- 1 tablespoon mustard
- 2 slices cheddar cheese, cut into small pieces
- 1 egg, lightly beaten

Instructions:
1. Add the flour and salt to the bowl of a food processor. Place the butter on top and pulse 10 to 15 times, until the mixture is crumbly.

2. Add the water and pulse several times until the dough begins to stick together in clumps.

3. Transfer the dough to a floured surface and work it into a large ball. Separate the ball into two disks, then roll the dough until it’s around ¼ inch thick. Cover the dough in plastic wrap and chill for at least 30 minutes or up to overnight.

4. When ready to assemble the hand pies, preheat the oven to 400 degrees. Brown the ground beef in a large skillet. Season with seasoning salt and pepper.

5. When the beef is cooked through, remove the pan from heat and stir in the ketchup and mustard. Allow the beef to cool while you prepare the hand pie crusts.

6. Use a pumpkin-shaped cookie cutter to cut out 8 crusts from one of the disks. Place the crusts on a parchment paper-lined baking sheet. Gather up the scraps of dough and re-roll them, if needed, to make more pumpkin crusts. Repeat the process with the second disk.

7. To make jack-o-lantern faces in the top crusts, use a sharp knife to cut out two triangle eyes and a semi-circle mouth.
8. Scoop one tablespoon of hamburger filling on each of the eight bottom crusts, making sure the filling doesn’t cover the edges of the crust.

9. Place the pieces of cheese on top of the hamburger filling.

10. Place the remaining pumpkin crusts on top of the pies, pressing the edges down to seal the crusts together. Use a fork to press the edges of the crusts together. Brush the egg on top of each pie.
11. Bake in the preheated oven for 20 to 30 minutes, until the crust is golden brown.

12. Allow cooling for five minutes before serving.
