This delicious Reuben Casserole is the perfect St. Patrick’s Day Recipe. While many people tend to love the flavors of this dish as a sandwich, in our house the combination makes this the perfect casserole recipe instead. (and honestly, having a heaping helping of this yummy recipe gives you all the flavors evenly in one big bite!)

Popping it in the oven and having it ready for dinner is a super simple way to have a festive and scrumptious St. Patrick’s Day dish to enjoy.

Did I mention that this recipe has literally just 6 ingredients that you have to add? It only takes 5 minutes to put together and 20 minutes to bake so that means that in less than 30 minutes of time, you’re going to have an awesome dish on the table for your family to enjoy.

The saltiness of the corned beef paired up with the sauerkraut really does make this casserole one of the best that you’ll have.

Super Simple Reuben Casserole

While this casserole is tasty as is, you can always pair this up with a nice side salad, too. It’s big enough for four servings as is but if you’re feeding a large group you can always double (or triple!) the recipe to make certain that there’s more than enough to go around.

It’s also important to note that this recipe tastes really great the next day as leftovers, too! I love a dish that brings me as much happiness the second day as it did the first.

Celebrate the St. Patrick’s holiday with this delicious dish. It’s one easy way to have a hearty meal with your loved ones where everyone can sit down together and enjoy each and every bite.

Ingredients:

  • 1 Pound Freshly Cut Corned Beef
  • 1 ½ Cups Sauerkraut
  • 1 Cup Thousand Island Dressing
  • ¼ Cup Butter
  • 6 Slices of Bread
  • 3 Slices Swiss Cheese

Prep Time: 5 Minutes
Cook Time: 20 Minutes
Serves: 4

Directions:

  1. Preheat oven to 350 degrees.

2. Grease a 2 or 2.5-quart casserole dish and layer the corned beef in the bottom evenly. 

3. Pour the dressing over the top of the beef and spread it out evenly.

4. Layer the cheese evenly over the dressing, then layer the sauerkraut evenly over the top of the cheese.

5. Chop the bread into large square chunks and place them in a bowl.

6. Melt the butter in a small dish in the microwave then pour it over the bread and mix the ingredients until all the bread has lightly been covered with the butter.

7. Evenly distribute the bread chunks over the top of the casserole and bake for 20 minutes or until the bread is golden brown.

8. Enjoy!
