It’s not only tasty and simple but it really does a great job of filling you up to give you the energy to get through the day. When it comes to one of our favorite wintertime recipes, this homemade stew recipe is at the top of our list.

The great part about this stew recipe is that it’s not hard to make at all. In fact, once you add everything to your slow cooker, it takes over and does all the work. Pretty awesome, right? With a prep time of just 5 minutes, you can rest easy knowing that at the end of your day, you’ll have a crockpot full of stew that you can enjoy each and every bite.

When it comes to stews, I really prefer to have larger chunks of meat and vegetables. But if this isn’t a texture that you prefer, you can easily alter them to be whatever size that you’d like. Typically stew meat is larger in size so you might need to cut them down a bit to be a better eating size.

Slow Cooker Beef Stew

Makes 6 servings
Prep time: 5 minutes
Cook time: 8 hours

Ingredients:

  • 3 cups beef broth
  • ¼ cup cornstarch
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato paste
  • 1 pound baby carrots
  • 3 potatoes, peeled and cubed
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1.5 to 2 pounds stew meat
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried parsley
  • 1 bay leaf

Instructions:

1.Combine the beef broth, cornstarch, Worcestershire sauce, and tomato paste in a bowl. Whisk until smooth and well combined. Set aside.

2. Add the carrots, potatoes, onion, garlic, and stew meat to the bowl of the slow cooker. Season with salt, pepper, parsley, and bay leaf. Stir to combine.

3. Pour the broth mixture over the meat mixture and place the lid on top of the slow cooker.

4. Set the slow cooker to cook on low for 6 to 8 hours or high for 4 hours.

5. Stir the stew well before serving.
