If you’re craving a hearty soup that is certain to warm you from head to toe, you’re going to love the flavors of this Slow Cooker Tortellini Soup. Not only does it taste creamy and delicious but the added tortellini give it a texture that you just won’t stop. This is probably one of my favorite soups because of the flavor and the fact that my slow cooker can take over and cook it to perfection.

The addition of the cream cheese is what adds that creaminess that I love and the sausage gives it that salty flavoring as well. You can even change it up a bit and add in some hot sausage if you’re wanting to give your tastebuds a jolt!

What I also really love about this soup is that it doesn’t really “need” anything else to go with it. It’s flavorful, it’s simple, yet it holds its own really well, too. But if you do want to pair it up with something, a crisp piece of bread is always a winning choice! Crackers and shredded cheese go well on top, too, and I like to add cilantro and chives for even more flavors from time to time.

Slow Cooker Tortellini Soup

Makes 6 servings
Prep time: 15 minutes
Cook time: 6 hours

Ingredients:

  • 1 pound ground Italian sausage
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 28-ounce can Italian style diced tomatoes
  • 1 32-ounce container chicken broth
  • 1 8-ounce package cream cheese
  • 1 18-ounce package frozen tortellini
  • 1 cup heavy cream

Instructions:


1.Brown the Italian sausage in a large skillet. When the meat is cooked through, add it to the bowl of the slow cooker.


2. Add the Italian seasoning, garlic powder, diced tomatoes, chicken broth, and cream cheese. Place the lid on the slow cooker and cook on low for 5 hours 30 minutes.

3. Stir to mix the melted cream cheese, then add the frozen tortellini and heavy cream to the slow cooker and turn the heat to high.

4. Place the lid back on and cook for 30 minutes, until the pasta is cooked.

5. Enjoy!
