One of the things we have an absolute overabundance of every year in our garden is zucchinis. Due to that reason, we have become quite creative at finding different recipes to make using Zucchini. I love that they are super easy to grow and that I can get them to continue producing just about the entire growing season around here but we can only eat so many zucchinis cooked the same way lol.

A couple of our favorite recipes to make using zucchini are frying them up with garlic and butter and a little salt, make chocolate zucchini bread, add them into soups, make a crust using them for pizza, and making these super delicious spicy chips from them.

We have become so creative with them that many of the recipes we make even my very picky eaters will eat many of the things we make with them. Everyone in the family loves snacking on these, I make a couple of batches at a time, but they still don’t stay around very long. I do have teenagers though, so that may have a little something to do with it. Some of the kids like a spicy ranch to dip them in, others just like a regular ranch dip for them.

Ingredients

  • 2 Zucchinis  
  • 1 cup of Almond Flour 
  • 3/4 of a cup of Panko Bread Crumbs 
  • 1 teaspoon of Salt 
  • 1 teaspoon of Pepper 
  • 1/4 a cup of Mrs. Dash Garlic and Herb Salt Free Blend
  • 3 Eggs
  • Dried Red Chili Peppers
  • Southwest Ranch (for dipping)

Directions

1.Start by dicing your zucchinis into thin slices, as shown.

2. In one bowl place your almond flour, panko crumbs, salt, pepper, and Mrs. Dash, mix well.

3.In another bowl, beat your 3 eggs.

4.Dip each slice of zucchini in eggs, and then in bread crumbs.

5.Making sure they are thickly coated. Place on parchment paper, on a baking sheet.

6.Bake at 375, for 10 minutes, flip and bake for 10 additional minutes.

7.Sprinkle each chip with red chili papers.

8.Bake again until crispy.

9.Serve hot and enjoy!
