Nothing says summer like the powerful duo of strawberry and lemonade. There’s something truly magical about how they complement each other perfectly. And while I like them both separately, I LOVE them together.
Who knew that there was a way to combine the freshness and flavor of strawberries with the sweetness and tartness of lemonade to create a truly amazing recipe that is sure to become a family staple. And what I love the most about this recipe? It’s the perfect food item to take along with you to all of those fun summer gatherings. Potlucks, BBQs, and family reunions are seriously the prime time to make up this amazing recipe to share!

If you are anything like me, you like to plan ahead. And whenever I make this Strawberry Lemonade Bar recipe, I’ve learned that I always need to prepare to make a double batch because seriously, it’s just that good. From the moment I set the pan down on the table, they start flying off the tray. The compliments come pouring in over how delicious it tastes and I’ve handed out the recipe more than a few times as well!
Look no further than this perfect summer fun recipe of Strawberry Lemonade Bars. They are certain to be a hit with anyone that takes just one bite!
Ingredients Needed Strawberry Lemonade Bars
Crust:
- 1/2 cup unsalted butter, room temp
- 1/4 cup granulated sugar
- 1 3/4 cups all-purpose flour
- 1/4 tsp kosher salt
Strawberry – lemon filling:
- 1 cup of fresh lemon juice ( approx 3-4 large lemons )
- 1 tbsp of lemon zest
- 1 cup chopped strawberries, stems, and hulls removed
- 1 1/4 cups granulated sugar (I use Xylitol sugar)
- 4 large eggs at room temp
- 1/4 cup all-purpose flour (I use a gluten-free baking mix from Costco)
- 1/2 tsp. baking powder1/4 tsp. salt
- 1 cup powdered sugar
- Strawberries and lemons for garnish

Instructions:
1. Preheat the oven to 350 degrees.
2. Line a 9 x 13 pan with parchment paper.
3. Spray the pan with non-stick baking spray.
4. Add the butter and sugar into a large bowl.
5. Use a hand mixer and beat until well combined.
6. Add the flour and salt to the butter mixture and mix with your hands until it is a crumbly dough.
7. Place the dough into your pan and press until there is an even layer.

8. Place in the oven and bake for 17 minutes.
9. In a blender add lemon juice, lemon zest, strawberries, and sugar.

10. Mix until the ingredients are well combined and it is smooth.
11. Now add the eggs one at a time on low speed until all eggs are combined.
12. Slowly add the flour, baking powder, and salt.
13. Continue to blend until it is combined.

14. Once the bake time is up, remove the crust from the oven.
15. Now slowly pour the mixture onto the crust.

16. Once filled, place it in he oven.
17. Bake 22-25 minutes.
18. Remove pan from the oven and let cool.
19. Once the bars are cooled sprinkle the top with powdered sugar.

20. Garnish with lemons and strawberries if desired.

I must admit I was dubious until I read your recipe, I have had too many strawberry jello bars at school potlucks. But these sound fabulous! Like lemon bars (a favorite) but with strawberries added. I believe they would go quickly. Thank you for bringing them to FF.
