It’s safe to say that this Strawberry Poke Coke just might be one of my favorite summer desserts. There’s nothing quite like the moistness of this cake, paired with the sweetness of fresh strawberries and the light texture of the added whipped cream. Dare I say that it pains me to have to share this with others?
And while I totally get that this cake recipe makes more than enough to share, I literally would have no issues gobbling up the entire thing all by myself. It really is just that good. I’m pretty much obsessed with the taste and texture of this cake which is why I plan on making it as often as I possibly can. (and I don’t think anyone in the house will argue that point, either!)
If you’re looking for a super simple and easy dessert, you can’t go wrong with these fast and easy poke cake recipe.

Be certain to check out my Italian Lemon Pound Cake recipe for another light and refreshing summer flavor. It’s a nice contrast to this cake with a totally different taste.
Make certain that you store any leftovers of this cake in the fridge so that you keep it nice and cool. (and if you have leftovers I’m so jealous because we usually gobble up the whole pan in just one sitting!)
Since poke cakes are a ton of fun to make, have everyone in the family join in on the baking fun! They’ll love being able to poke holes in the cake and being a part of the baking process!
