Strawberry Lemonade Bars



  • 1/2 cup unsalted butter room temp
  • 1/4 cup granulated sugar
  • 1 3/4 cups all-purpose flour
  • 1/4 tsp kosher salt

Strawberry - lemon filling:

  • 1 cup fresh lemon juice 3-4 large lemons
  • 1 tbsp. lemon zest
  • 1 cup chopped strawberries stems and hull removed
  • 1 1/4 cups granulated sugar
  • 4 large eggs room temp.
  • 1/4 cup all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup powdered sugar
  • Strawberries and lemons for garnish


  • Preheat the oven to 350. degrees.
  • Line a 9 x 13 pan with parchment paper.
  • Spray the pan with non-stick baking spray.
  • Add the butter and sugar in a large bowl.
  • Use a hand mixer and beat until combined.
  • Add the flour and salt to the butter mix and mix with your hands until a crumbly dough.
  • Place the dough into your pan and press until there is a even layer.
  • Place in the oven and bake 17 minutes.
  • In a stand mixer add the lemon juice, lemon zest, strawberries, and sugar.
  • Mix until the ingredients are well combined and it is smooth.
  • Now add the eggs one at a time on low speed until all eggs are combined.
  • Slowly add the flour, baking powder, and salt.
  • Continue to blend until it is combined.
  • Once the bake time is up remove the crust from the oven.
  • Now slowly pour the mixture onto the crust.
  • Once filled place it in he oven.
  • Bake 22-25 minutes.
  • Remove from oven and let cool.
  • Once the bars are cool sprinkle with powdered sugar.
  • Garnish with lemons and strawberries..
