Whole Wheat Granola and Mixed Berry Pancakes

Ingredients

  • 2 c. Whole Wheat flour
  • 4 tbsp. Sugar
  • ½ tsp. Salt
  • 1 ½ tbsp. Baking powder
  • 2 c. Whole milk
  • 2 Eggs
  • ¼ c. Unsweetened applesauce
  • 1 tbsp. Olive oil
  • 1 tsp. Vanilla extract
  • 1 c. Organic granola
  • 1 c. Chopped mixed berries frozen or fresh

Instructions

  • In a mixing bowl, combine the whole wheat flour, sugar, salt and baking powder.

  • In another mixing bowl, beat together two large chicken eggs.
  • Add in 2 cups of milk.
  • Pour in ¼ c. of unsweetened applesauce.
  • Add 1 tablespoon of olive oil.
  • Mix in 1 tsp. Vanilla extract.
  • Slowly stir in the dry ingredients to the wet ingredients, and mix until well combined.
  • Add 1 cup of granola to the pancake mixture, and stir until just combined.
  • Pour in 1 cup of chopped mixed berries that are either fresh or frozen, and again, stir until they have just been incorporated into the mix.

  • Place a small amount of butter or oil into a skillet over medium-high heat, and add ½ cup of the pancake batter to the skillet. Cook until browned and cooked through on each side.

  • Serve pancakes with butter and your favorite syrup or toppings.
