In a mixing bowl, combine the whole wheat flour, sugar, salt and baking powder.
In another mixing bowl, beat together two large chicken eggs.
Add in 2 cups of milk.
Pour in ¼ c. of unsweetened applesauce.
Add 1 tablespoon of olive oil.
Mix in 1 tsp. Vanilla extract.
Slowly stir in the dry ingredients to the wet ingredients, and mix until well combined.
Add 1 cup of granola to the pancake mixture, and stir until just combined.
Pour in 1 cup of chopped mixed berries that are either fresh or frozen, and again, stir until they have just been incorporated into the mix.
Place a small amount of butter or oil into a skillet over medium-high heat, and add ½ cup of the pancake batter to the skillet. Cook until browned and cooked through on each side.
Serve pancakes with butter and your favorite syrup or toppings.
