Preheat oven to 350 degrees.
In a small bowl, combine the chopped pretzels, powdered sugar and melted butter. Press the mixture into the bottom of each jar. Place the jars in a small baking dish and bake for 10 minutes, until fragrant.
Remove the jars from the oven and allow to cool.
In a large bowl, beat together the cream cheese, powdered sugar, and vanilla until smooth. Fold in the whipped topping.
Spoon or pipe the mixture in an even layer over the top of the crust in each jar.
Combine the boiling water and gelatin and stir until dissolved. Allow to cool for around five minutes, then stir in the chopped strawberries.
Pour the mixture into each jar until the jar is full. Place the lids on the jars and refrigerate for at least four hours, until the gelatin is set.
