If you’re looking for a great way to use up all that zucchini that you have growing out of your ears from your garden, you’re in luck! This simple, yet hearty, Zucchini and Rice Skillet dinner is just what you need. Not only is it loaded with flavor, but it’s packed full of healthy ingredients, too.

The kids really love this recipe because it’s loaded down with cheese and I’m a fan of all the fun and tasty veggies. So when you add the two together, it’s no wonder this meal is always a hit!

The other big positive of this simple dinner recipe is that it tastes less than an hour of time to create. After a day of homeschooling or running errands, being able to come home and whip this dish up is such a breeze.

You can even make this dinner a fun family affair by having the kids help out, too. They can pick the zucchini from the garden and wash and prep it so that it’s ready for you to cut up and serve. You can also use ground turkey meat in this recipe as well if you’re wanting to cut out some of the fat content. Changing it up is another perk!

Zucchini and Rice Skillet Dinner

Makes 5 servings
Prep time: 10 minutes
Cook time: 30 minutes

Ingredients:

  • 2 medium zucchinis, sliced and quartered
  • ½ tablespoon olive oil
  • 1 pound ground beef
  • 1 red bell pepper, diced
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 1 15-ounce can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 cup white rice, prepared
  • 2 cups shredded mozzarella cheese, divided
  • Salt and pepper to taste

Instructions:

1.Heat a large skillet over medium heat. Add the olive oil and zucchini and sauté until tender. Season with salt and pepper, then remove zucchini to a plate.

2. Add the ground beef, bell pepper, onion, and garlic to the skillet and sauté until browned.

3. Add the tomato sauce to the pan and season with oregano, parsley, basil, garlic powder, salt, and pepper. Reduce heat to medium-low and simmer for 10 minutes, stirring occasionally.

4. When the sauce has reduced, add the rice, half the cheese, and zucchini and stir to combine. Top the skillet with the remaining cheese.

5. Place a lid on the pan and cook for five to 10 minutes, until cheese on top is melted.

6. Enjoy!
