We love that this simple Easter dessert has three layers of fun color as well. Not only does it bring out happiness but every single person can literally make their own cheesecake cup without help.
This is a big deal in our family! We have a lot of people that want to be their own chef of their dishes and so many times, they can’t. But with this simple dessert recipe, everyone can create their own Robins Egg cup and make it look however they want.
What a great way to spend Easter together by gathering in the kitchen and cooking up some fun. Then, have everyone take this simple Easter Dessert and enjoy it with great conversations and lots of laughs. It sounds like the perfect day to spend the Easter holiday!

Easter Dessert ~ Robins Egg Cheesecake Cups
Prep Time: 15 Minutes
Cook Time: 0 Minutes
Total Time: 15 Minutes
Serves: 4
Ingredients:
- 16 Ounces Cream Cheese, room temp
- 2 Cups Powdered Sugar
- 1 Container (4 Ounces) Robin’s Eggs
- â…“ Cup Shredded Coconut
- 3 Tablespoons Milk
- 1 Teaspoon Coconut Extract
- 4 Drops Gel Green Food Dye
- 2 Drops Gel Yellow Food Dye
- 2 Drops Gel Blue Food Dye
- 2 Drops Gel Pink Food Dye

Directions:
1.In a large bowl, combine the cream cheese, powdered sugar, and extract. Using a hand mixer, whip it until it’s smooth.

2. Break the cream cheese mixture into three even portions. In one bowl, put the blue dye, in another bowl, put the yellow dye, and in the last bowl, put the pink dye. Mix each bowl thoroughly into no white streaks appear. Be sure to not mix colors.
3. Place ¾ of the Robin’s Eggs into a baggie and crush them with a rolling pin. Set aside.
4. In a small bowl, combine the coconut and green food dye and mix well. Set aside.

5. In 4 small custard-style glasses or cups, place a ⅓-inch layer of the yellow mixture in the bottom, top with crushed Robin’s Eggs. Do the same with the pink. Top the cup off with the blue mixture.
6. Top each cup with about 2 Tablespoons of the green coconut and place three of the remaining Robin’s eggs on top of each cup.

7. Chill if desired and enjoy!
